Easy Thai Ground Chicken Meatballs

This is one of our favorite recipes for the summer. It features our free-range and humanely raised Jidori chicken. (And it’s super easy!)


1 lb RARE ground chicken
2 tsp fresh grated ginger
4 scallion minced
1/2 tsp fish sauce
1 tsp reduced sodium soy sauce
1/2 tsp kosher salt
1/2 tsp white pepper
1 tsp red pepper flakes
1 tsp toasted sesame oil
1 egg beaten
1/2 cup panko bread crumbs
1/4 cup regular bread crumbs
Canola Oil for brushing on top
Fresh parsley (optional)

Mixing Ground Chicken for Meatball Recipe

1 – Mix all ingredients with your hands to get it thoroughly mixed – latex kitchen gloves are great for this.

2 – Make 1.5 oz (1 1/2 inch diameter) balls and lay in cast iron skillet or greased pan. 1lb makes about 15 chicken meat balls.

3 – Lightly brush meatballs with Canola oil.

4 – Bake 13-15 minutes (or until nicely browned) at 450 degrees.
